OMAKASE IN SAIGON: WHAT TO CHECK BEFORE YOU BOOK
You've found a beautiful counter, saved a few food photos and picked a night. Before you book, there's one more conversation worth having: which menu are you actually reserving, where will you sit, and what will the bill include?
QUICK ANSWER: Start with the experience you want. Compare Yuzu for modern presentation and a lunch option, Kasen for menu and seating choices, Noriboi for Japanese courses with Vietnamese ingredients, and Sushi Rei for a small counter and traditional sushi craft. Then check the menu, final cost and booking terms for your date.

PICK THE KIND OF MEAL YOU WANT
For a date where watching the chef is part of the evening, ask for counter seats together. For a birthday where catching up is the priority, ask whether a table or private room makes more sense. Those are different experiences, even inside the same restaurant.
Be honest about your group, too. If everyone wants to order different dishes, arrive at different times or head out early, consider a restaurant with an à la carte menu. A set sequence works better when everyone is happy to give the meal its own time.
Here's how we'd narrow the shortlist. The suggestions below are based on the restaurants' published menus and formats, rather than a ranking or a firsthand tasting review.
Restaurant | Why consider it | Published menu example | Detail to confirm |
|---|---|---|---|
Yuzu Ho Chi Minh | Modern presentation; compare lunch and dinner. | The Rhythm: VND 2,200,000 per guest at lunch. The Moment: VND 4,000,000. VAT and service extra. | Select the Ho Chi Minh branch and confirm the full bill. |
Kasen | A choice of sushi, sashimi, seasonal or Wagyu focused menus. | Premium: VND 2,800,000 per guest. 5% service and 8% VAT extra. | Premium is counter only; a private room means a different menu. |
Noriboi | Japanese courses with local ingredients, in a setting inspired by water. | The official link lists Kawa, Nami and Biwako menus. Request a current per-person quote. | 5% service and VAT extra. Confirm the price basis and applicable VAT. |
Sushi Rei | Traditional sushi craft at an eight seat counter. | Shio: VND 4,000,000 per guest. 10% VAT and 5% service extra. | Choose the dinner sitting and confirm deposit terms. |

YUZU: CHECK LUNCH BEFORE COMMITTING TO DINNER
Yuzu describes its approach as modern omakase. Its archive photography gives you a sense of the presentation, but ask for the current menu before deciding a particular dish is the reason to go. See the Yuzu Omakase venue guide for more context. Yuzu's official introduction
If you're curious about omakase and can be flexible with timing, compare lunch first. The Rhythm's lunch restriction matters: you shouldn't build a dinner budget around that price. Ask how the available courses differ and whether your preferred menu is served at your chosen sitting.
Also check the branch carefully. Yuzu has separate city options. The Ho Chi Minh contact page gives 34 Thu Khoa Huan Street; a menu you saved from another city may not apply here. Official branch details

KASEN: CHOOSE YOUR MENU AND SEAT TOGETHER
At 101 Lê Thị Riêng, Kasen describes a progression of sushi, sashimi and other Japanese courses. Beyond Premium, its published options include menus focused on sashimi, seasonal ingredients or Wagyu. That's a useful way to start the conversation if someone has a clear preference.
The seating detail is easy to miss. Premium is served only at the counter. The other three menus are also offered in a private room for two to twelve guests, with a VND 10,000,000 room minimum. Ask what counts towards that minimum and how charges apply before treating it as your final budget. Kasen confirms reservations by email or phone. Official menu and booking details
Our take: decide what you'd enjoy eating before picking the most expensive option. Then check whether that menu works with the seat you want. If privacy is your main priority, the Saigon private dining guide compares other restaurant formats too.
NORIBOI: FOR A MEAL WITH A SAIGON CONNECTION
If you're visiting Vietnam and want that to show up on the plate, Noriboi is worth a closer look. Its linked Kawa menu pairs cod with lá lốt, while Nami includes sea bream with Hòa Lộc mango sauce. Those are useful clues to its character: Japanese courses with Vietnamese ingredients woven through them. Official linked menu
The setting is part of the idea too. SokoGroup describes an interior built around water, including a tea ceremony area and water features facing the chef's counter. We'd shortlist it for a date or celebration where the surroundings matter as much as the menu. Operator's description
Before booking, request the current menu and a written total per guest. The linked PDF doesn't clearly state the price unit or per-person basis; its footer adds 5% service and 8% or 10% VAT. It also has no visible validity date. Confirm which menu, charges and ingredients apply to your evening rather than relying on an older screenshot.
SUSHI REI: FOR THE FRIEND WHO REALLY CARES ABOUT SUSHI
Sushi Rei is our extra premium pick for a specific reason: it puts the craft of sushi at the centre. The restaurant describes Edomae style rice made with two vinegars, carefully prepared seafood and an interior using hinoki wood. We'd look here for an anniversary or a focused dinner with someone who enjoys those details.
Its counter has two published dinner sittings, starting at 17:30 and 20:00. Beyond Shio, the signature Rei course is VND 4,800,000 before charges. Choose the course and sitting together, then give the meal its own space in your evening.
Standard advance bookings list a 50% deposit, refundable with at least 48 hours' notice. There is separate wording for same-day groups, so reconfirm the conditions for your booking. Official menus and reservation terms
A GREAT PHOTO IS A STARTING POINT
Save the dish that caught your eye and ask whether it's on the menu you're booking. An archive photograph doesn't establish today's ingredients or what's included at every price. This matters especially if you're choosing the whole evening around one course.

SEND THESE DETAILS IN ONE MESSAGE
You can save yourself a lot of back and forth by putting the useful questions together:
Your date, guest count, preferred time and whether you want seats together at the counter or a room.
The menu you're considering and a total budget per person, including drinks, VAT and service.
Any allergies or ingredients you avoid. Ask what the kitchen can accommodate before confirming; don't assume a substitution is possible.
Whether everyone must choose the same menu, and how long to allow for the meal.
The payment needed to confirm, cancellation deadline and what happens if the guest count changes or someone arrives late.
Deposit and cancellation rules differ between these restaurants, and not all the checked pages publish complete terms. Get the conditions in writing for your booking. A submitted request is still a request until the restaurant confirms it.
For a celebration, add cake, seating and timing questions upfront. If the dinner is part of a larger evening, see how planning with Connect Saigon works. Consultation and itinerary design are free. Optional transport, VIP hosts and itinerary management are quoted separately; restaurant bills are paid directly to venues. Restaurant reservation and payment terms remain venue specific.
